This bottle of very rare ‘Extravecchio’ Traditional Balsamic Vinegar of Modena D.O.P (aged for over 25 years) is drawn from the Pedroni family collection of wooden barrels which were carefully installed in the Pedroni family cellar by their great-great-grandfather Claudio.
Claudio’s collection of wooden barrels produce a balsamic vinegar which is characterised by a soft and fruity taste, resulting from a long ageing in chestnut-wood and cherry-wood barrels. Its unique features include having both acidulous yet sweet and velvety nuances typical of fruit.
This product is as rare as the kind of wood used to produce it and is a favourite of connoisseurs who love fruity sensations.

The balsamic vinegar should be kept in the glass container at room temperature. Once open, the bottle does not need any particular attention. It is enough to carefully close the lid (no need to seal it tightly shut) and keep it far from any substance emitting strong perfumes or smells which may contaminate the balsamic vinegar.
