Traditional Balsamic Vinegar of Modena D.O.P undergoes a long labour intensive process which is strictly controlled and certified by the ‘Consortium of Balsamic Vinegar of Modena’.

This bottle of Traditional Balsamic Vinegar of Modena has been aged for over 12 years and is named after Italo; the current Patriarch of the Pedroni family.

This vinegar and has been aged in chestnut and oak wood barrels following the tradition of the Pedroni family which gives it all the classical features of Traditional Balsamic Vinegar Modena.  

Its colour is very dark and bright while its density has a flowing and syrup nature. Its scent is complex and pungent and its taste is a perfect balance between sweet and sour.   

This vinegar represents the ideal choice for those who are starting to approach the enchanting world of the fragrances and tastes of the Traditional Balsamic Vinegar of Modena D.O.P.

Storage Instructions:
The balsamic vinegar should be kept in the glass container at room temperature. Once open, the bottle does not need any particular attention. It is enough to carefully close the lid (no need to seal it tightly shut) and keep it far from any substance emitting strong perfumes or smells which may contaminate the balsamic vinegar.
